RECIPE: Karvelas Pizza Co.’s Georgia Pie feat. Galbani Professionale

Southern Charm Meets New York Tradition

Ingredients

  • 16 oz. pizza dough
  • 9–10 oz. Galbani Premio Mozzarella
  • 7–8 oz. pizza sauce
  • 1 Tbsp. minced garlic
  • 1 Tbsp. extra virgin olive oil
  • 3 fresh basil leaves, thinly sliced
  • Dry oregano, to taste
  • Light selection of favorite toppings, applied sparingly

Directions

  1. Combine the pizza sauce, minced garlic, extra virgin olive oil and sliced basil leaves in a mixing bowl. Stir gently until fully incorporated. Set aside.
  2. Stretch the pizza dough evenly to a 16-inch round on a lightly floured surface or pizza peel, maintaining a thin profile consistent with Sicilian style.
  3. Sprinkle a light, even layer of dry oregano across the dough.
  4. Evenly top with Galbani Premio Mozzarella.
  5. Drizzle or pipe the prepared sauce in thin, parallel strips across the top of the cheese layer. This technique allows the sauce to caramelize slightly during baking while complementing the cheese.
  6. Apply chosen toppings lightly and evenly. Exercise restraint to ensure the sauce and cheese remain prominent.
  7. Bake in a preheated pizza oven or conventional oven at the temperature and time appropriate for your equipment until the crust is golden and crisp, the cheese is melted and lightly browned, and the sauce strips have set.

About the Pizza

Joey Karvelas knows a little Southern charm can go a long way. That’s exactly the idea behind the Georgia Pie—a hometown favorite inspired by the iconic Long Island Grandma pizza.

Joey took everything he loved about the New York classic and gave it a warm Georgia welcome, pairing homemade sauce with creamy Galbani Premio Mozzarella on a thin, crispy crust. The result is a pie that’s simple, satisfying and proof that when quality ingredients are treated right, they don’t need much else to win people over.
