The Pizza Kitchen: New Haven Clam Pie

New Haven Clam Pie
330g dough ball
(approx. 12 oz.)
1 tbsp. cornmeal
36-40 littleneck clams,

steamed and removed from shell
1/2 cup shredded Galbani mozzarella
1/4 cup freshly grated Pecorino Romano
2 cloves finely minced garlic
2 tbsp. EVOO
1/4 tsp. dried oregano

Steamed Clams

1 c. white wine (or water)
1/2 onion, sliced
minced garlic
