Ingredients (14-inch pizza)
Dough
1 (14-inch) pizza dough ball (about 12–14 oz / 340–400 g), stretched to 14 inches
Base
1 tablespoon extra virgin olive oil (plus a little more as needed)
1 teaspoon Italian seasoning (or to taste)
Cheese Blend
½ cup (about 2 oz) Black Diamond Two-Year White Cheddar, shredded
1 cup (about 4 oz) Galbani Premium WMLM Mozzarella Loaf, shredded
½ cup (about 2 oz) Galbani Provolone Loaf, shredded
Roasted Mango
¾ cup roasted mango (about 4–5 oz)
1 teaspoon olive oil
½ teaspoon smoked paprika (or to taste)
Pinch of salt (optional)
Vegetables
½ cup sliced baby bell peppers (about 3–4 peppers)
1 jalapeño, thinly sliced (use half if you want less heat)
Pulled Pork Mixture
¾ cup pulled pork (about 4–5 oz)
2 tablespoons black cherry chipotle BBQ sauce (mixed into the pork, more or less to taste)
Finish
1–2 tablespoons black cherry chipotle BBQ sauce, for drizzle (to taste)
½ cup mango-pineapple salsa (or to taste)
Mango-Pineapple Salsa
¼ cup finely diced pineapple
¼ cup finely diced mango
2 tablespoons finely diced onion
1 tablespoon finely diced jalapeño (or less, to taste)
1–2 teaspoons fresh lemon juice (to taste)
Pinch of salt (to taste)
Instructions
1) Preheat the Oven
Preheat your oven to its hottest setting. If using a pizza oven, aim for a high-heat bake that gives you a crisp, well-colored crust.
2) Roast the Mango
Toss the mango with 1 teaspoon olive oil and smoked paprika. Roast until lightly caramelized and softened. Let cool slightly before topping the pizza.
3) Make the Salsa
In a bowl, combine diced pineapple, mango, onion, and jalapeño. Add lemon juice and salt to taste. Mix well and refrigerate until ready to use.
4) Stretch the Dough
Stretch the dough into a 14-inch round with a thin center and a defined rim.
5) Build the Base
Brush the dough with 1 tablespoon extra virgin olive oil and sprinkle with Italian seasoning.
6) Add the Cheese
Evenly distribute the cheddar, mozzarella, and provolone over the base.
7) Add the Toppings
Scatter the roasted mango, sliced baby bell peppers, jalapeños, and the pulled pork mixed with BBQ sauce across the pizza.
8) Bake
Bake until the crust is blistered and baked through, and the cheese is fully melted and browned to your preference.
9) Finish the Pizza
Before adding the salsa, drizzle the pizza with black cherry chipotle BBQ sauce to taste.
Spoon the mango-pineapple salsa over the top. Slice and serve immediately.
