Inspired by PMQ’s senior media producer Blake Harris and developed on the spot by our own PMQ Pizza Kitchen chef, Brian Hernandez, the Triple Impear-Mint pizza features two types of cheese from our friends at Galbani – Galbani Premio Shredded Mozzarella and Galbani Whole Milk Ricotta – plus a Parmesan cream sauce, diced pears and mint leaves. For This Pizza you will need:
SAUCE (To taste):
Butter
Cream
Flour
Salt & Pepper
Paremsan
RICOTTA MIX (To taste):
Galbani Whole Milk Ricotta
Diced pear
Sugar
PIZZA:
14″ Doughball
7-8 oz. Galbani Premio Shredded Mozzarella
1-2 oz. Crumbled walnuts
4-5 Torn mint leaves
Drizzle Mike’s Hot Honey
PROCESS:
Make your sauce by melting your butter and adding flour, Parmesan, cream and salt & pepper to taste. Stop when you have reached desired thickness.
Dice up some fresh pears and mix them with your ricotta and some sugar to taste.
Stretch your dough ball and add your Parmesan cream sauce, then add your mozzarella and walnuts. Bake at 550° for about 7-10 minutes.
When golden brown, remove from the oven and add 12 dollops of your ricotta mix, tear and spread your mint leaves, then drizzle some Mike’s Hot Honey.
